Caramel Millet Porridge

This needs to be said first to dispel any suspicions given the name of this BeUtiful breakfast – it is what I like to call the holy trio of gluten free, dairy free and sugar free!  That said I hope you can now relax a little more as we delve into the amazing nutritional qualities of this breakfast.

First it is made with millet, a naturally gluten free grain which is easy to digest whilst balancing blood sugar remarkably, in ancient medicinal techniques millet was used to tone and treat the pancreas making it an excellent choice for anyone with blood sugar or diabetes challenges.  However, I would say its most beautifying quality is that it is alkaline, one of the very few grains that does not create acid in your system, given that your Ph balance is one of the building blocks of your health and wellbeing this is absolutely crucial to get right, if you do you will find everything else, including your weight, so much easier to manage.

To this we have added a superfood dream of mesquite powder, which gives it the caramel flavour, raw cacao nibs, coconut palm sugar and goji berries…too much deliciousness to measure for sure!

The Ingredients & The Love…photo 2

  • 2/3 cup of millet flakes
  • 1 1/2 cups of unsweetened rice milk (or half half with water and rice milk)
  • 1 dessert spoon of mesquite powder
  • 1 dessert spoon of raw cacao nibs
  • 1 dessert spoon of goji berries
  • 2 teaspoons of coconut palm sugar

Place the millet and the liquid into a pan on a gentle heat and continue to stir for 3-5 minutes.  Over this time the mixture will become quite thick so you will need to add more or less liquid to get the consistency you prefer.  I love it thick, so be warned, you may need more liquid!

Once the millet is cooked through, after about 5-7 minutes, remove from the heat and sit for 1 minute to allow the fierce heat to settle a little.  Then stir in the mesquite powder to give that yummy caramel flavour.

Pour into a bowl and then cover the top with the coconut palm sugar.  Then add the cacao nibs and the goji berries and devour, beautifully of course!
