I love pesto but I never seem to find one that is simple with just all natural ingredients, and its even harder to find a tasty vegan pesto. After a shop bought pasta and pesto at the weekend which, I really did not enjoy, I decided to make my own BeUtiful pesto.
The ingredients are fresh, vibrant and full of nutrients. Kale in a pesto may sound strange but it is absolutely delicious and gives your pesto a real nutrient boost, it also makes the most beautiful green colour, a good reminder that this pesto has a nutritionista heart!
Usually there is cheese in pesto too but this one is so flavoursome and rich it really doesn’t need it, and if you didn’t know, you certainly wouldn’t miss it.
- 1 cup of pitted green olives (I used raw, unpasteurised, herb marinated green olives)
- 4-5 tablespoons of extra virgin olive oil
- 1 handful kale
- 2 tablespoons pine nuts
- Juice of half a lemon
- 1 teaspoon of sea salt (I love Fleur de Sal with basil)
- Black pepper
This will make enough to dress pasta for four people.
Put all ingredients into a food processor and blend, leave slightly coarse, adding more oil if necessary. Please taste and then gauge your seasoning as this will differ depending on the type of olives and salt that you use.
Once blended, cover and refrigerate until ready to use.
