This smoothie bowl is blissful, so much so that I had to call it ‘skinny’ because it tastes anything but! I love foods that taste so delicious that its hard to believe its actually good for you, let alone helpful to create lightness.
It just shows how programmed our mind is to judge our food and usually this means anything we enjoy we become suspicious of and anything we don’t we put into the healthy category. I cannot tell you how untrue this is and thats why I love making BeUtiful Foods, helping to transform the way we think and feel about food and that pleasure is absolutely not a sin!
- 1 1/2 cup Blueberries (save some for the top)
- 1 Banana (frozen)
- 1 teaspoon Maqui Powder
- 2 teaspoons of coconut butter (if you cannot find butter then use cold pressed oil)
- 1/2 – 1 Cup Coconut Milk (I don’t use pure coconut milk, go for the one you will find in the non dairy milk section, its usually blended with water and/or rice milk)
- 1 tablespoon Chia Seeds
- 2 tablespoons Freshly Shredded Coconut
Place banana and blueberries in the blender and add 1/3 cup of the coconut milk just to get things started and then continue to add the amount to get your desired consistency.
Once you are happy add the maqui powder and the coconut butter to the blender and blend until smooth.
Pour into a bowl and then sprinkle the chia seeds. On top of this arrange the shredded coconut and the blueberries and finish with an extra sprinkle of maqui powder.
