Kale is an absolute Goddess when it comes to nutrition but it does have a very powerful taste and quite a robust texture which, unless juicing, isn’t always enjoyed in a salad. This is a shame because it is full of minerals, including iron and magnesium, crucial minerals for hormonal balance, healthy blood and vital life force. It is also abundant with chlorophyll which helps to oxygenate your entire system, protects your cells and cleanses and detoxifies. Greens, especially kale, also balance blood sugar and if you are trying to lose weight blood sugar is essential to get under control, greens are your best friend for this!
So, to make friends with kale a little more I wanted to share this recipe with you. It is the most delicate way to eat kale raw and I think it tastes great and is certainly a change from the usual spinach or rocket options. Give it a go and let me know what you think!
I make a large portion to use over two days so below is enough for 4 people.
- 6 kale leaves
- 2 limes
- 3 tablespoons dried cranberries (try to get sugar free all natural)
- 3 tablespoons sliced almonds
- 2 tablespoons extra virgin olive oil
- Black pepper
- Sea Salt
First, take the kale and remove the stems, these are the tough parts that are not nice in a salad. Once you have done this then thinly slice, just like you would cabbage for a coleslaw and place into a large bowl.
Now squeeze over the fresh juice of 2 limes and then massage into the kale with your hands. This helps to soften the texture of the kale whilst infusing the flavour.
Now you can add the rest of the ingredients and mix together.
Add black pepper and sea salt to your taste, I used perhaps 1 teaspoon of sea salt and then lots of black pepper…how to quantify how many turns of the pepper grinder?!
This salad tastes great straight away or left refrigerated for the day after. Enjoy!
