I am so excited about this recipe because even I was surprised at how delicious this was, and so will you when I tell you that this baby has five ingredients total! Yes, five ingredients, six if you like it spicy.
If you are cooking for yourself usually a curry is something we consider too much effort just for one given the usual gamut of spices, onions and garlic, and thats just the curry base!
This curry took only 30 minutes from start to finish, the sweet potato is rich in beta carotene providing your immune system and cells excellent protective support, whilst comforting and soothing your sacral chakra. They also contain minerals that help you to de-bloat. The kale, obviously a nutrition super star, balances the sweetness and adds a good dose of much needed greens to stabilise blood sugar, cleanse, detoxify and remineralise. All in all this curry is fantastic, even if I do say so myself.
- 2 teaspoons of coconut oil
- 1 medium sweet potato cut into small chunks
- 2 handfuls of kale sliced
- 3/4 tin of coconut milk (all natural)
- 2 teaspoons of curry powder
- 1/2 teaspoon red chill powder (optional)
In a saucepan melt the coconut oil, then add the sweet potato and sauté for 3-4 minutes. Now add the curry powder and chill powder, if you are using, and sauté for a further 2 minutes keeping everything moving so not to burn.
Next pour over the coconut milk, combine well, place the lid on the saucepan and leave to simmer for 20-25 minutes, or until the sweet plato begins to soften.
For the last five minutes add the kale and allow to soften slightly.
Once the sweet potato is properly cooked, season to your taste with sea salt and black pepper and serve!
