I love being creative with all natural ingredients because then it becomes food for your soul! And isn’t this what eating is all about, to soothe and nourish ourselves, on all levels? Food is not just food and the more we try to make it that the more our resistance creates an unhealthy and dependant relationship with what we eat.
This breakfast pie is very easy to make, it is gluten and dairy free and combines a enriching mix of antioxidants, protein and essential fatty acids, and the great thing is it is all in a form that is easy to digest so you won’t be feeling heavy afterwards despite it looking incredibly indulgent!
For the ‘Pie’
- 1 tbsp Almonds
- 2 tbsp Sunflower Seeds
- 1 tbsp of coconut
- 1 tbsp of coconut oil (liquid, so warm if it is solidified)
Put in a blender and grind until a biscuity texture is reached. Place in a bowl and then stir with the coconut oil to allow it to bind a little easier and then press into your serving dish with the back of a spoon to form a nice even base. Place this is the refrigerator whilst we make the filling.
For the ‘Pie Filling’
- 1/2 cup strawberries
- 1 banana
Blend these together. If you have a strong blender you will be able to do this without adding liquid, if you need add a touch of almond milk to get a smooth consistency.
Remove the Pie from the fridge and pour the smoothie mixture over.
Decorate with slices of strawberry and an extra sprinkle of your nut mixture from earlier and it is ready to enjoy.
