Gluten Free Banana Protein Pancakes

These pancakes are amazing because they literally have just 3 ingredients.  When I first found this recipe I just had to try as curiosity got the better of me, but I have to admit, my expectations were exceeded and so I have to share this recipe.

Its great too as there are no grains in the recipe, no flours of any kind, gluten free or otherwise.  This makes these pancakes accessible to everyone as the ingredients are everyday items.  I love making simple things that everyone can enjoy, nutrition doesn’t have to be complicated with lists of ingredients you can only buy from speciality stores all the time you know!

  • 1 large ripe banana
  • 2 eggs
  • 1/2 tsp of cinnamon powder

Mash the banana with a fork and then add the eggs and whisk together.  The mixture will be quite frothy but try not to leave any chunks of banana.  Now add the cinnamon and combine well.

Heat a small pan and use coconut oil to grease.  On a low-medium heat spoon some of the mixture into the pan and allow to cook for about 2 minutes on either side.  Make them small as they do break easily.

I stacked mine with extra coconut oil, berries, cinnamon, sunflower seeds and a little agave but you can top with whatever takes your fancy!

How simple is this recipe!  Unbelievable hey!  Give them a try…
