I adore this smoothie, it is so pretty to look at and the flavour combination of blueberries and fresh mint really work, so yummy.
But this smoothie is not just a pretty face, it has uber cool nutrition style too! The star of this smoothie though is the fresh mint. Did you know that 2 tablespoons of fresh mint leaves, about the same amount I used, has 214% of your recommended daily amount of tryptophan! This is one of the nine essential amino acids that is crucial for protein synthesis and energy metabolism. Even more fascinating is that tryptophan is essential for the production of serotonin, the happy hormone that boosts our mood and regulates sleeping patterns. Who knew that these gentle looking mint leaves could nourish our body with so much LOVE!

- 1 cup of blueberries
- 1 banana
- 2/3 cup of almond milk
- 1/2 cup of ice
- 2 tablespoons, around 8, fresh mint leaves
- Blueberries and mint to garnish, and a little sprinkle of coconut too if you have
Simply blend all the ingredients in your blender and enjoy immediately. Be careful how much almond milk you add so you can choose your favourite consistency. I quite like mine thick!
